I concocted these the other night and they ended up being a huge hit with everyone in our family. They were gone in a flash and I had to make more since Jesse was wondering what happened to them the next day!

I love that they can be made up ahead of time and frozen (by the way, this recipe easily doubles) – making them so easy to include in a sack lunch. They are great fresh from the oven, at room temperature, and yep, even cold. 🙂 If I’m serving these for dinner, I’ll often include marinara sauce on the side. Dipping sauce is definitely not necessary; for quick on-the-go meals, we love them just the way they are!
This Grilled Three Cheese Bread is a sure winner, and goes well with many different grilled main dishes. The grill is the perfect way to get that crispy outside and soft, chewy, melt-y inside. Yum!
Today’s recipe is one that was one of our favorite law school recipes. I haven’t made it since the law school days and had all but forgotten about it until I saw Amy’s recipe for Ham & Cheese Pockets. Since our budget was so tight when Jesse was in law school, I only made this recipe when I was able to find ham on some amazing closeout price. Every once in awhile, Dillon’s would have it marked down to $0.49 to $0.99 for the small packages of thin-sliced lunchmeat. I usually had a coupon to pair with this deal, so I rarely paid over $0.50 per package of lunchmeat. I could stretch one package to 5-6 Ham & Cheese Pockets and they were a special treat since we didn’t eat a lot of meat during that season of life.
We love lasagna at our house. But I rarely buy lasagna noodles to make it because there aren’t as many sales and coupons available for lasagna noodles as there are for spiral and rotini noodles do. So, a number of years ago, I re-did our regular lasagna recipe substituting spiral/rotini noodles for lasagna noodles and dubbed it “Lasagna Casserole”. It’s become a staple recipe at our home and it’s one of the first things I consider making when I find marked-down cottage cheese at Dillon’s. Back when we were first married, we just left the meat out of this recipe, since it wasn’t in our budget. We like it better with meat these days, but it’s still hearty as a meatless casserole.
